Going to Galveston Island for first time for a working vacation in late April. Will be during the week so should be pretty quiet since will be after Good Friday weekend and before school lets out for the year.
1. Which property do you recommend we stay? (staying with certificates up to Cat 5). Would like relatively quiet with a view of
the water from the room if possible. Which of the properties do you recommend?
2. Any recommendations for restaurants or things to do/ see? Don't really care about "nightlife".
3. Anything else we should be aware of?

I will be of no help in the hotel to stay as we don't visit Galveston often. There are a couple of excellent things to see/do other than hanging out on the beach.
Hope you are not expecting crystal clear blue water and white sand beaches as that is not what Galveston has to offer. Get into downtown and wander around the Strand as there are a couple of good places to dine as well as learn of the history of Galveston Island.
You can also take the Bolivar Ferry over to Crystal Beach Bolivar Galveston Ferry TXDOT
On the way to the island stop by the Kemah Boardwalk - The Fun Never Stops! Very good TexMex food at Cadillac Bar and for seafood Aquarium Restaurant - Kemah, TX as well as famous Landry's Seafood - Kemah, TX which also has a restaurant in Galveston.
I'm sure other Insiders will be able to give you some hotel ideas and enjoy your trip.
