There are a lot of great resorts in the Caribbean. If you do a 'search' for caribbean properties a lot of posts should be able to help you with good information.
Also, try going to the marriott.com homepage and click on "Marriott Rerwards Offers" in the dropdown menu on Marriott Rewards up the top of the page. Enter any Caribbean destination in the 'Edit Deals Search' box. A deal for 15% off will appear for Caribbean and Mexico locations. Click on it and all the Caribbean and Mexico locations will appear. But, then click on 'find all deals at this hotel' on any property and ALL their deals will come up. Look for the deal where Marriott is running a '100% chance of savings in the Caribbean and Mexico'. The prices are fantastic. I think the rates for the deal go thru the mid December and pretty sure they are at every property.
I know this sounds like a big exercise, but it's worth it!
We booked an Ocean Front Suite at the Rennaissance Aruba for early December at $198 on the AAA rate. Can't beat that pricing!

I have stayed at the Casa Magna in Puerto Vallarta and really enjoyed it. Its right on the beach, with a lovely pool over looking the beach, and the mountains in the distance. One of our favorite things about Puerto Vallarta is that there is both the beach and the moutains. The public rooms are like a hacienda. There is a spa, and the restaurant serves regional dishes from all over Mexico. Some day I would like to visit the various regions of Mexico, but the Casa Magna let me preview the food. There are also some really great places to visit in and around Puerto Vallarte in case you want to do something besides sitting on the beach. If your there in the right season you can even see whales from the beach.. Its alo a very cultural place frequented by Frida Khalo and Diego Rivera. You can go to the Red Cabbage Restaurant, and see where the artists would congregate, or take a trip up the coast to see where The Nigh of the Iguana was filmed, and the house that. Right now the property is on sale for $100/night, and for Labor Day weekend there is a special for $84/night.
I was impressed with the Marriott resort in Saint Kitts. It's a lovely property on the ocean and the island is still fairly unchanged by tourism.
One thing I will say about the island is it's probably the friendliest place in the Caribbean. We drove around the island and in every little town and hamlet we passed through locals stopped in their tracks and let out a giant hello.
The food on the island was very good as well. The main town, Basseterre is nothing to write home about however.
My next choice would be St. Thomas. This island is still unspoiled and there's plenty to do. The Marriott has gotten mixed reviews so do your homework. Since it's a US territory it's easy to deal with. The currency is the dollar, there is no immigration at the airport and it's in the AT&T calling area so data and voice are included in your plan with no roaming charges. St Thomas also has some great restaurants.
wow! didn't realize it was so much. One of the cruises was suppose to dock there, but didn't as something happened to the dock in a hurricane, so we had to settle at looking at it from across the water on St. Kitts. Have always wondered what it was like. Knew it was an expensive place, but didn't realize it applied to the ferry too.
