We are going to say at the Cosmopolitan in LV next month.
I have booked the first two nights on points (the room rate was circa $800 per night on those two days!)
The rest of the week I am paying cash.
I read in the LV Cosmo thread that you only get one free breakfast per stay.
As our stay is in different room types, is it worth checking out and then checking in again.. so we get two free breakfasts? (Saving us $100ish!)

Good question! I would call the hotel and ask them (front desk management). Also, as you are a Platinum member you would ordinarily receive free breakfasts everyday for weekday stays (not on weekends), unless the LV Cosmopolitan is 'different.' (I've never stayed there.) A number of Insiders are familiar with the hotel, so hopefully you'll get a response soon from someone more 'in the know' than I.
This is a Marriott property. It is supposed to follow the rules for Marriott. When the Elite rules (T&C's) say you get free breakfast for Gold and Platinum every weekday in Marriott hotels (except Courtyards) well, that is the rule.
First question would be why does Marriott allow an outlier in their business model to follow this practice and (Question 2) why don't they correct it? Who's in charge here in this instance? Are the inmates (Cosmopol) running the asylum or the warden (Marriott execs)? Or, am I missing something here in this whole scenario?
Bottom line for me would be I'm not staying there. Who needs to jump through all the gyrations you're doing to get a free breakfast that you're already entitled to? Why put yourself through the aggravation? Hello Rennaisance. They do a very nice job following the rules and recognizing your loyalty.
