What is the difference in rewards earnings value between choosing to stay at a courtyard or a  to a Fairfield inn?  Night credits?  For example,  if given the choice, which gives the better return when using points/or $ assuming they are both nice/equal in quality?  Are night /stay credits toward levels given for each?

Yes, the number of NIGHTS credited to an individual's elite status is the same whatever property it is. Where there is a difference is the number of POINTS earned per $ spent. With the exception of Residence Inn where it is 5 pts/$,one should earn 10pts/$. Then there are the additional bonus points earned on $ spent depending on one's elite status. Silver: 20%, Gold 25%, and Platinum 50%.

All Marriott properties give 10 points per dollar with the exception of Residence in and TownePlace which give 5.  Each paid night in any property count equally towards status. Earn Points for Rewards | Get Marriott Points
